Vinification: Palhete wine is a red wine obtained from the partial tanning of red grapes or from the tanning of red and white grapes, in which the total value of white grapes does not exceed 15%. In this Tobias Palhete grapes from Touriga Nacional, Encruzado, Barcelo and Cerceal were vinified. Fermentation took place with indigenous yeasts and traditional Dão winemaking. The Palhetes do Dão were very popular in the past, being mentioned in books by authors such as Aquilino Ribeiro and Camilo Castelo Branco.
